Multipurpose Sun dried tomato pesto

My easy, multipurpose sun dried tomato pesto, non only is delicious, it is as versatile as everything I like to keep in my fridge.  It will keep for up to one month.  Use it to make a salad amazing.  Use it to make a pasta amazing.

Add it to other sauces.  Use it as a spread.  It is very rich in umami.






4 Cups Sun dried tomatoes

2 Cups loosely packed basil

1/3 Cup Pine Nuts

1/2 Cup Olive oil

Salt and pepper


Soak Sundried tomatoes over night.  Drain well and either air dry for one day or dry in oven for 2 hours.  Combine all ingredients in a food processor.  Pulse until you reach desired consistency.
